Protein Packed Blueberry Pancakes
One thing about me, is if pancakes are on the menu, I’ll be ordering them! I love pancakes. Recently I was playing around for breakfast and came up with this delicious, 3 point version of blueberry pancakes, that taste like the real deal but are packed with protein, and we all know protein is the key to keeping us full longer! This was super easy to make and it involved ingredients I always have on hand which is always a win!
WHAT YOU’LL NEED
- Better Oats 100 Calorie Pack Oatmeal- I purchase mine from Amazon because I use one everyday (you can grab them here) or you can also find these at Target. They come in Cinnamon Roll also and they are only 2 Points per package!
- Kodiak Cakes– I used 3 tbsp of the Kodiak Buttermilk Protein Packed pancake mix.
- 1 egg
- Cinnamon
- Baking Powder – 1 tsp
- 1/2 Cup Fat Free Cottage Cheese
- 3 tbsp water
- Handful of blueberries
How To Make These Protein Packed Pancakes
To start, add one packet of the oatmeal, 1/2 cup fat free cottage cheese, 1 egg, cinnamon, 1 tsp baking powder, 3 tbsp of kodiak cakes, and 1/4 cup of water into a blender or Magic Bullet! Blend for about 30 seconds until smooth. Once it’s completely blended I added a handful of blueberries and let it sit for about 5 minutes.
Then I preheated a pan for about 2 minutes and sprayed with cooking spray. For me it made 3 good sized pancakes in my 12 inch pan! The key for pancakes is we don’t want to flip too early. It took about 3-4 mnutes on low/medium heat until it started to “bubble” a bit, then I flipped and cooked another 3-4 minutes!
Once they were done I added some spray butter and 2 tbsp of sugar free syrup for the perfect breakfast!
WHAT SHOULD I SERVE WITH IT?
These pancakes are super filling by themselves, but I sometimes love to add a side of Turkey Sausage and a scrambled egg for some extra protein and to fill me up on those days where you just feel like you can eat all day! It would only add one extra point if you were to have 2 jones dairy farm turkey sausages, as the extra egg is zero WW points!
Protein Packed Blueberry Pancakes
Equipment
- 1 blender
Ingredients
- 1 packet Better Oats Oatmeal (Maple Brown Sugar or Cinnamon Roll)
- 3 tbsp Kodiak Buttermilk pancakes
- 1/2 cup fat free cottage cheese
- 1 egg
- 3 tbsp water
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 cup fresh blueberries (optional)
Instructions
- Add all of the ingredients besdies the blueberries to a blender and blend about 30 seconds
- Pre Heat a pan or griddle to low/medium heat
- Add blueberries to the pancake mix and let sit about 5 minutes (optional)
- Spray the pan with cooking spray and add the pancake batter into 3 good sized pancakes
- Wait about 3-4 minutes until you see the pancakes start to bubble up a bit before flipping.
- Flip, and cook an additional 3-4 minutes until pancakes are cooked through.
