Protein Packed Blueberry Pancakes

Equipment

  • 1 blender

Ingredients

  • 1 packet Better Oats Oatmeal (Maple Brown Sugar or Cinnamon Roll)
  • 3 tbsp Kodiak Buttermilk pancakes
  • 1/2 cup fat free cottage cheese
  • 1 egg
  • 3 tbsp water
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 cup fresh blueberries (optional)

Instructions

  • Add all of the ingredients besdies the blueberries to a blender and blend about 30 seconds
  • Pre Heat a pan or griddle to low/medium heat
  • Add blueberries to the pancake mix and let sit about 5 minutes (optional)
  • Spray the pan with cooking spray and add the pancake batter into 3 good sized pancakes
  • Wait about 3-4 minutes until you see the pancakes start to bubble up a bit before flipping.
  • Flip, and cook an additional 3-4 minutes until pancakes are cooked through.
