French Toast “McGriddle”
One of my absolute favorite things to get from McDonalds is their McGriddle. The mix of sweet and savory is just top notch! But, a regular McGriddle runs about 15-20 points. Totally doable on occasion, but lightening up things I’m craving to eat on a more regular basis has been one of the things that has helped me in my success! A few years ago, an awesome woman named Judy (@foodiejudy_ww) on instagram posted something similar to this and I have been hooked since! This is the version I have been making for the last few years.
WHAT YOU’LL NEED:
- 2 slices of low point bread, I use Schmidt 647 bread at 1 point per slice
- 1 slice of velveeta cheese (1 point)
- 2 Jones dairy farm turkey sausages (1 point)
- 2 eggs and 1 egg white
- Cinnamon
- Vaniilla extract
- Splash of milk, I used oat milk
- Sugar free syrup (2 tbsp)
HOW TO MAKE IT:
First, I start by making the mixture that I’m going to dip the bread in! I mix one egg, one egg white, 1/2 tsp of cinnamon, 1/2 tsp of vanilla extrract, 1/2 tbsp of sugar free syrup, and 1 tbsp of oat milk in a shallow bowl. Dip each slice of bread into the mixture and put into a heated pan thats been coated with non stick cooking spray. I cook each slice of french toast about 3 minutes on each side.
While that’s cooking, I microwave the 2 turkey sausages. You can cook these however you prefer. When they are cooked, I cut them in half and set aside. Cook up an egg, either in the same pan as the french toast, or a separate pan if you don’t have room! Once everything is cooked, assemble the sandwich! One slice of french toast, add cheese, add the turkey sausage, add an egg, and top with the other slice of french toast. Cut in half and you can either drizzle 1.5 tbsp of sugar free syrup on top, or some prefer to use it to dip the sandwich in!
CAN I MAKE SUBSTITIONS?
Of course! As always, if there are any ingredients that are being used different than the ones I show, just double check your points! I have made this sandwich using center cut bacon and canadian bacon. Both come out great!
