Healthy Crispy Chicken Sandwich Dupe

This lightened up chicken sandwich will satisfy your McChicken craving with a fraction of the points/calories. 30 grams of protein!

“Fried” chicken has always been my love language. If there is something with fried/crispy chicken on the menu, that’s what I’m getting. Before I started my weight loss journey with WW, every time I would try to “lose weight” I would think I had to eat just grilled chicken everyday, boy was I wrong. Enter.. extra crispy shake and bake! Its my favorite lower point crispy chicken alternative and has been a staple of mine from the very beginning!! Its sooo good. Of course you can use what you have in your pantry (panko, cornflakes) but if you can find this I highly recommend it! I usually get mine at Walmart or Target but have also ordered from Amazon!

What You’ll Need

  • EXTRA CRISPY SHAKE AND BAKE
  • Flour (optional)
  • Egg or Egg beaters (I prefer egg beaters when coating)
  • Yellow Mustard
  • Salt & Pepper
  • Light Mayo (optional for the topping!)
  • Pickles (optional topping)
  • Zero Point Ground Chicken/Turkey. I prefer Perdue 98% ground chicken for Zero

How To Make It

In a bowl, mix 4oz of ground chicken, 1 tsp of yellow mustard, salt and pepper, and mix together to form a patty, You can add a little garlic power or splash of pickle juice if you prefer! Once formed into a patty, coat it in 4 grams of flour, dip it into the 3tbsp of egg beaters, then into the 12 grams of extra crispy shake and bake and put it into a pre heated air fryer (375 degrees) for about 12 minutes. I always check mine with a digital meat thermometer as it can change depending on the thickness of the patty and each air fryer also cooks differently!

Once it’s cooked, assemble your sandwich! I love to use the Old Tyme 647 buns, but feel free to use what you have here, just adjust the points. The patty is only 1 point so you can totally just use a regular hamburger roll for an extra point or two! I have also eaten it on a 2 point Thomas Light English muffin and it was great!

For toppings I kept it super simple, I just did 1 tbsp of light mayo and a few slices of pickles! Shredded lettuce would also be great here to give more of the actual McChicken vibe, but I am a sucker for crispy chicken with mayo and pickles!

Can I Use Ground Turkey Or Chicken Breast?

Of course! You can totally use the 99% fat free ground turkey if you have that, I just prefer ground chicken! If you use the chicken breast thats going to be delicious but more of a regular fried chicken taste as opposted to a patty/McChicken vibe! I know a lot of people that ground their own chicken in a food processor and love it, I never have as I have always been able to find zero point ground chicken at my grocery store!

Can I Leave Our The Flour?

Totally! I like it better with, but have made it without when I am in a rush have left it off and it came out great ! I just think the coating of flour helps with the consistency!

I make these chicken sandwiches almost weekly after finding your recipe! Even my husband and kids request this one. I just use regular chicken breasts cut into little patties and they come out perfect every time. It’s nice to have a recipe to save on Pinterest now too. Thank you!
