This lightened up, simple, Apple Oatmeal Cooke Crumble will hit the spot when you're craving apple pie without breaking the point bank! Comes together in just 2 minutes with a handful of ingredients that I always have on hand!

Dessert is one of my favorite things, and was a non negotiable for me when I started my weight loss journey. I knew I had to have it, but I’d have to get creative to lighten up things I’m craving (while of course having the real deal on occasion!).. and the other night I was craving a warm apple pie. I didn’t have any, nor did I have the points for it, but I did have an apple and some Alyssas Healthy Oatmeal bites, and decided to make this lightened up Apple Crumble, and boy did it hit the spot!

The best part is it only takes a handful of ingredients and came together in just 2 minutes!

What you’ll need to make this Apple Oatmeal Cookie Crumble

Here is what I used to make this delicious, simple dessert.

  • 1 APPLE– I used Honeycrisp
  • Cinnamon
  • 3 Alyssas Healthy Oatmeal Bites – In NJ I usually get these in the bakery aisle of Stop & Shop or Wegmans, and I’ve even had luck finding them at CVS! For online you can order from Amazon or straight from the Alyssascookies website! These are a bit pricier, but at one point a piece and one of the most delicious things, I make them work o occasion bc I love them so much!   • 3 Tbsp Fat Free Reddi Whip for 0 points
  • 1 Tbsp Water

How to Make this Apple Oatmeal Cookie Crumble

This truly could not be simpler. First, I just peeled and chopped up my apple. I added cinnamon and 1 tbsp water, covered with a paper towel, and microwaved for 2 minutes. Once the apple was cooked, I just crumbled up 3 of the Alyssas Oatmeal Bites and topped with the fat free Reddi-Whip.

You can also adjust the number of cookies you crumble based on how many points you want to spend, but I thought 3 of them were perfect.

Told you it was simple! Now I personally think this would go AMAZING on top of my Zero Point Yogurt Fluff for some added protein and volume. Or you can add it to a low point vanilla ice cream for a few extra points (My favorite are the Nicks Ice Cream or the Breyers Carb Smart)

Ingredients

  • 1 apple (peeled and chopped)
  • 1 tsp cinnamon
  • 1 tbsp water
  • 3 Alyssas Heathy Oatmeal Bites
  • 3 tbsp Fat Free Reddi Whip

Instructions

  • First, peel and dice up an apple and add it to a microwave safe bowl.
  • Sprinkle the cinnamon on the apple, add 1 tbsp of water, cover with a paper towel, and microwave 2 minutes.
  • Once the apple is done, crumble up 3 Alyssas Healthy Oatmeal Bites on top.
  • Add 3 tbsp of fat free Reddi Whip on top and enjoy!
