Lightened Up Eggs In A Hole
First things first, naming this breakfast was harder than actaully making it! SO many variations for this simple, delicious low point breakfast. Growing up my mom called it “eggs in a hat” but I’m starting to think she made that up herself. From asking others the most common names were eggs in a hole (thats my favorite because its the most obvious), eggs in a basket, toad in a hole, eggs in a nest, eggs in a frame, and so man others. My mom made this ALL the time growing up, and it was even a vacation staple that she would make for the whole family each morning! So when I started doing WW and realized I could make it for only TWO points, I was so excited!
What You’ll Need
- 2 SLICES 647 bread (or any low point bread this is my absolute favorite) if you cant find it local you can order it from netrition.com here
- 2 eggs
- Spray Butter
- Salt & Pepper
- Cooking spray
How To Make It
This recipe truly could not be easier to make. It comes together in under 5 minutes. First I start by putting the 2 slices of bread and top of each other and cutting out the center. Some use a shot glass or other tricks to make a perfect hole which works, but I just cut or rip it out since when the egg is cooked in there you can’t tell its not perfect. I save the 2 cut out pieces and cook those in the pan also. I spray both sides and the 2 little extra pieces with I Can’t Believe It’s Not Butter spray and add some salt and pepper.
Spray a heated pan with cooking spray and add the toast. Crack an egg right into the middle of each hole. I cook it for about 2 minutes then flip it along with the 2 little pieces. Cook for another 2-3 minutes depending on how you enjoy your egg! I like my eggs slightly runny. That’s it! So easy. I love to use the 2 extra pieces of bread to dip into my runny egg!
Lightened Up Eggs in a Hole
Ingredients
- 2 slices 647 italian or white bread (or any low point bread of your choice)
- 2 eggs
- spray butter
- salt & pepper to taste
- cooking spray to coat pan
Instructions
- Takes 2 slices of low point bread and stack them on top of each other.
- Cut out a hole in the center using a knife, a glass, or just pushing through with your hand! All methods work here.
- reserve the 2 cut out slices of bread
- Pre-heat a pan on medium/low heat and spray with cooking spray
- Add the bread and crack an egg into each hole
- Cook for about 2 minutes and flip everything
- Cook for another 2-3 minutes depending how you like your eggs
- I use the little extra pieces that were toasted to dip my in my egg!
