Lightened Up Buffalo Chicken Sandwich

A lower point, lower calorie twist on one of my favorite fried chicken sandwiches! Comes in at only 5 Weight Watchers points, and has 30g of protein which will help you stay full!

If I had to pick one thing to eat every day forever, fried chicken sandwiches might be the winner! So when I started Weight Watchers it was super important to find a low point, delicious way to eat them frequently! I came across Extra Crispy Shake and Bake (shout out to @feliciafitnesshealth on instagram for sharing this years ago!) and my life was changed!

I use it for so many things, and one of my most favorite is making fried chicken sandwiches! My husband who is NOT on WW requests Shake and Bake chicken all the time! We make it in our air fryer and it comes out PERFECT.

You can do SO many variations. This is just a twist on a favorite that I used to get at a restuarant I worked at, just lightened up to only FIVE Weight Watchers points. I love to pair it with some low point chips, or some veggies, or if I have more points to spend I air fry some french fries with it!

What you need to make this Buffalo Chicken Sandwich

Only a handful of ingredients are needed to make this delicious sandwich. Of course the toppings are optional, but to me they are the perfect combo with the buffalo chicken!

  • Chicken Breast – zero points, I use about 4 oz raw
  • Extra Crispy Shake and Bake – 1/3 of the packet is only 2 WW points
  • Hot Sauce– Zero Points, this is what I coat the chicken in before adding to the shake and bake
  • Bolthouse Farms Chunky Blue Cheese– One of my favorite dressings! You can find these in the refrigerated aisle in most grocery stores. 2 tbsp is only 1 WW point
  • 1 tbsp jalapenos – I love the tamed, jarred version
  • Slice of red onion
  • 647 Sandwich Roll -2 WW points, or any bun of your choice just adjust your points.

How To Make This Lightened Up Buffalo Chicken Sandwich

Super simple, because thats how we roll at ashleytracks 🙂 .. First pre-heat your air fryer to 375. While that’s heating up, add hot sauce into a bowl (I add about 2 tbsp), and 1/3 of the package of Shake and Bake to a different bowl. If you are a gram weigher like myself, it is up to 21 grams of the Shake and Bake for 2 points.

Cut your chicken breast into a filet, and make sure its not tooo thick, I like mine about 1/2 inch tops.. Dip the chicken breast into the hot sauce first, then the Shake and Bake, and add it to your air fryer. I cook it on 375 about 12-13 minutes, depending on the thickness of the chicken. I always suggest checking after about 10 minutes with a digital thermometer and going from there!

Once the chicken is done, time to assemble the sandwich! There are sooo many variations you can do here, but this is one of my favorites! I use the Old Tyme 647 bun for 2 points, but feel free to use whatever you have on hand! Place the chicken on the bun, add 2 tbsp of Bolthouse Farms Blue Cheese (you can find this in most refrigerated sections at your grocery store!), add diced jalapenos, and red onion.

I love to pair this with my zero point Sweet and Spicy Cumbers on the side.

Equipment

  • Air Fryer

Ingredients

  • 4 oz boneless, skinless chicken breast
  • 1 647 Sandwich Roll (or any sandwich roll of your choice)
  • 21 g Extra Crispy Shake and Bake
  • 2 tbsp Bolthouse Farms Blue Cheese Dressing
  • 1 tbsp tamed jalapenos
  • 1 slice red onion
  • 2 tbsp hot sauce

Instructions

  • Pre-heat your air fryer to 375
  • Cut your chicken breast into a filet, about 1/2 inch thickness
  • In 2 shallow bowls, add the hot sauce to one, and the Extra Crispy Shake and Bake to the other
  • Dip the chicken into the hot sauce, then into the Shake and Bake and place in the air fryer for about 13-14 minutes (check with a thermometer depending on thickness of the chicken)
  • Add the chicken to the bun, top with the blue cheese, jalapenos, and red onion and enjoy!
