Lightened up blueberry pancake mcgriddle
I can not get enough of the sweet & savory combo that Aw McGriddle gives, and it’s always been one of my go to breakfasts, but the regular one from Mickey D’s runs over 20 WW points!! Whole fine on occasion, I knew I needed to find a way to make it just as delish while not breaking the points bank, and this recipe did just that! As an added bonus this has 27 grams of protein which helps you stay full through the morning!
WHAT YOU’LL NEED TO MAKE THIS BLUEBERRY PANCAKE MCGRIDDLE:
The beautiful thing about this recipe is it is made from just a handful of ingredients that I ALWAYS have on hand!
- 48 grams of Kodiak buttermilk protein pancakes (or anything similar)
- 2 eggs
- About 1/3 cup of water
- 1/4 cup or so of blueberries, I prefer fresh but frozen works
- 1 slice of velveeta cheese (or any cheese of your liking just adjust the points!)
- 2 tbsp sugar free syrup

HOW TO MAKE THIS BLUEBERRY PANCAKE MCGRIDDLE DUPE:
I used 48g of kodiak cakes for 3 points (this is slightly under a half cup) and mixed with water to the consistency I lie. This comes to about 1/3 cup. Then I added fresh blueberries. I cooked those in a pan then cooked 2 jones turkey sausages & 2 eggs
To assemble the sandwich I just did put one pancake on a plate, topped with the velveeta slice, added one of the eggs, then I added the turkey sausages cut in half and topped that with the other egg. Topped it with the other blueberry pancake, cut it in half, then top with 2 tbsp sugar free syrup. I like to eat this as a sandwich, but you can cut it up if you find it too messy!

Lightened Up Blueberry Pancake McGriddle
Instructions
- In a bowl, mix together Kodiak pancake mix with cold water, adding in slowly. It comes to roughly 1/3 cup, you want the better to be more thick and less runny.
- Add fresh blueberries
- Heat a pan on low/medium and spray with nonstick cooking spray.
- Add the blueberry pancakes and cook on one side until it starts to bubble (roughly 3-4 minutes) flip, then cook another 3-4 minutes.
- While the pancakes are cooking, in a separate pan cook up 2 eggs and 2 jones turkey sausages (if you want to save a pan you can cook these after the pancakes are done in that pan)
- Now it's time to assemble the sandwich once everything is cooked. Add 1 pancake to a plate, add the Velveeta cheese, one egg, the turkey sausage (I cut mine in half so its 4 thin slices) , add the other egg, and top with the 2nd pancake.
- Cut in half, add 2 tbsp of sugar free syrup and enjoy!
