Healthy Bacon, Egg, & Cheese Crunchwrap
Prior to starting WW a few years ago, I would eat a Bacon, Egg, & Cheese breakfast sandwich a few times a week. In NJ the best way to get one is on a hard roll, and add salt, pepper, and ketchup! (BEC+SPK as they would write on the tinfoil they’d wrap it in!) So when I decided to start my Weight Watchers journey, I knew I would still want to eat them frequently! Made a handful of swaps and have been able to enjoy BEC sammies since starting. After all, we want sustainable, maintainable weight loss right?
All I did was make a few small swaps, and I have been enjoying these breakfast sandwiches within my WW points with no problem!
What You’ll Need
For this 4 point Bacon, Egg, & Cheese crunchwrap, this is what I use. Feel free to use what you have on hand, just make sure you adjust the WW Points or Macro information!
- Center Cut Bacon -2 slices for 2 WW Points
- 1 CutDaCarb flatbread– 1 WW point. I purchase these directly from cutdacarb.com
- 1 slice Velveeta Original Cheese
- 2 eggs (0r egg whites if you prefer!)
- 1 tbsp no sugar added ketchup – optional
How To Make This 4 Point Bacon, Egg, & Cheese Crunchwrap
First thing I do, is cook up some eggs and bacon, You can do this however you prefer! If I am trying to save time, I just microwave 2 slices of center cut bacon in between 2 paper towels on a microwave safe plate, for about 2 minutes. For the eggs you can scramble, or cook into an egg patty, whichever you find easiest!
Once both are cooked I them cool for about 1 minute before adding everything to the flatbread to make the wrap. I find that when food is steaming it makes the wrap more likely to breakthrough.
Next up, I add all of the ingredients to the center of the flatbread. I like to put the cheese down first, then the egg, bacon, and ketchup. Dont overfill the flatbread!
Now. it’s time to fold the crunchwrap. I attached a picture above to give you a better idea of how I do it. I am by no means an expert wrapper, but it gets the job done! I just start with the bottom rightcorner and fold it in, then fold the center in, followed up by the lower left corner, then start folding the top left in, the top center, and seal it by folding the top right on top! Hold it like this, and then spray with cooking spray. Add it to a heated pan on low/medium heat seam side down. Spray the other side while you wait to flip it. I usually flip after bout 3-4 minutes, and cook another 3 minutes or so until the wrap is crispy. To save a dish, I do this right in the pan that I cooked the eggs in. Once its done, cut in half and using a chefs knife, and Enjoy!
What If I Don’t Have These Ingredients?
If you don’t have the CutDaCarb wrap, you can totally do this using a Josephs Lavash wrap that you can purchase at most Walmarts. This will add 1 point, and I much prefer the CutDaCarb texture, but have just these in a pinch and they have come out great! You can also use any lower point tortilla, but they will be smaller and harder to work with.
For the cheese, feel free to use any cheese! I love the way the Velveeta melts and that its only 1 point, but you can use anything you want here.
For the Bacon, I have used chicken bacon, turkey, bacon, or even regular bacon. Just adjust the point value when changing these ingredients!
I hope you love this as much as I do!
Healthy Bacon, Egg, & Cheese Crunchwrap
Ingredients
- 1 CutDaCarb flatbread
- 2 Eggs
- 1 slice velveeta cheese (or any cheese of your choice)
- 2 slices center cut bacon (cooked)
- 1 tbsp no sugar added ketchup (optional)
Instructions
- First up, cook the eggs how you prefer. I do 2 eggs in a pan with cooking spray and fold it into a patty. You can also scramble them!
- Cook up the center cut bacon to your preference. I microwaved mine for 2 miutes in between a paper towel on a microwave safe dish. You can also air fry, pan cook, or bake!
- Once the bacon & eggs are cooked, assemble the crunch wrap by first layering the slice of velveeta, the bacon, then top with the egg. Place the ingredients in the center of the wrap to allow room to fold the sides in. I like to let the egg cool a minute before wrapping.
- Start to fold the wrap in by taking in one corner at a time. I start with bottom left, then bottom center, bottom right, top left, top center, top right.
- Once its all folder, spray with cooking spray and put into a pan seam side down and cook about 3-4 miutes on one side.
- Flip, and cook an additional 3 minutes or so until the wrap is crispy.
- Cut in half using a sharp knife (I use a chefs knife) and enjoy!!
