BBQ Jalapeno Popper Chicken Burger
This entire, delicious, bbq jalapeño stuffed burger was only FOUR points and one of the best things I’ve made in quite some time! My husband even devoured his (for this who are new, my husband is one of those people we all roll our eyes at where he can eat anything and everything and has never put on a pound in his life).. when he likes a recipe I know its a hit and the complete opposite of “diet food”.
After all, that was my main goal when I joined WW in 2018. I wanted to enjoy all of my meals and never feel like I was “dieting”. I just love to use zero point foods and make them delicious since they’re nutrient dense and packed with protein!
What You’ll Need
- 98% fat free ground chicken or 99% fat free ground turkey
- Laughing Cow cheese – 1 wedge for 1 point
- Shredded cheese- I used Cabot Lite 50 shredded cheddar
- Seasonings of your choice – I love Flavor God everything
- Jalapeños – I use the jar of sliced tamed jalapeños
- Rays No Sugar Added Original BBQ Sauce
- Schmidt 647 hamburger buns – you can use any hamburger bun here just adjust the points
These are the ingredients I used for this recipe. I personally love buying the Perdue 98% fat free ground chicken for zero points over turkey, but feel free to use 99% fat free ground turkey here too. You can also sub in 96/4 ground beef if you want to spend a few more points and prefer beef. I have even had people tell me they use an attachment to their food processor and ground their own chicken breast for zero, I may have to try that one day!
How To Make These Burgers
This recipe was so simple, yet so insanely delicious. The patty by itself is only 1 WW point!! First in a bowl, I combined 5 oz of ground chicken with about 1 tbsp of the jalapeños and some of the seasoning. It’s okay here to have a little juice from the jalapeños!
Once they were mixed I formed them into two even patties on a late. I added one laughing cow cheese wedge on top of one patty, and then added the other on top and sealed it to make a full patty with the cheese in the middle! This gives it that “popper” effect!
I cooked them in a pan that I coated with cooking spray, about 5 minutes on each side until cooked through (I check with a digital thermometer!)
Can I use Something Besides Grilled Chicken?
Absolutely! To keep the points the same you can also use 99% ground turkey, but these would also be great with 96/4 lean ground beef if you wanted to spend a few more points! Can’t go wrong either way!
I Can’t Find These Buns, What Should I Use?
These 647 buns have been one of my absolute favorite things, and living in NJ they are available at most grocery stores and Walmarts. The best place online I’ve found to purchase these buns is through Netrition.com. They sell the 647 products at a good price! Grab them here. The burger is SO low point, that you can absolutely use a regular old hamburger bun, or any other light bun you love! Just always check the points and update them if you change any product from what I wrote here!
BBQ Jalapeno Popper Chicken Burger
Ingredients
- 5 oz 98% fat free Perdue ground chicken (or 99% fat free ground turkey)
- 1 laughing cow light cheese wedge
- 2 tbsp Rays No Sugar Added BBQ Sauce
- 1/2 tbsp Flavorgod Everything seasoning (or any seasoning of your choice)
- 16 Grams Lite 50 Cabot Cheese (or any cheese of your choice)
Instructions
- In a bowl, mix together the ground chicken, jalapenos, and seasoning
- Form into 2 even patties
- Place 1 Laughing Cow cheese wedge on top of one of the patties and spread out
- Place the other patty on top and seal it in
- Cook in a coated pan on low/medium heat 5 minutes on each side (check the interntal temperature to read 165 degrees)
- Once cooked add the cheese on top of the burger
- Place the patty onto a toasted 647 bun, and add the BBQ sauce
- optional, add a slice of red onion
