Zero Point Mexi-Cauli Chicken Mix
When I first started eating zero point ground chicken or fat free ground turkey, I had at tough time because I found it pretty boring and dry. I wanted to use it in my recipes, because its so great nutrient wise, and being zero points makes it even better, but I was constantly striking out. Until one day, I decided to add a cup of salsa for flavor and juiciness, and it became one of my favorites! I was at the store and saw mexican style cauliflower rice and said Hey! Let me add this to my ground chicken and salsa mixture for extra fiber, volume, and flavor, and it was one of the best concoctions I’ve come up with! It quickly became a staple that I eat almost daily in one way or another!
This is one thing I actually meal prep in advance, I just make the whole package of chicken & rice and divide it into approx 4 servings for zero points a serving! This way I can just microwave it and know that I always have this zero point, high protein option in the fridge! It’s super simple to make.
What You Need To Make This Zero Point Mexi-Cauli Chicken Mix

- 98% GROUND CHICKEN– Zero points (has to be 98% lean not the 93%).. I personally love ground chicken, but you can definitely use 98-99% fat free ground turkey here if that’s what you have! If you can’t find the ground chicken, you can ground your own in a food processor!
- MEXICAN CAULIFLOWER RICE- Here I am using the Green Giant brand, the entire bag is only 1 point! I have also used the Trader Joes Mexican style cauliflower rice but that one is EXTREMELY spicy, this one isn’t very spicy at all. I have even used store brand before, and know people that have just used their own plain cauliflower rice and seasoned it. Feel free to get creative, but for this recipe I will be using the Green Giant!
- SALSA- I am using Tostitos medium chunky salsa. I use about 1 cup for zero points.
- SEASONING– The salsa gives so much flavor to the chicken, but while I’ browning it I like to season it with some chili and garlic powder. I have also used taco seasoning!
That’s all. As usual its super simple and minimum ingredients.
How To Make This Zero Point Mexi-Cauli Chicken Mix
First, take your package of ground chicken and sauté it in a pan over medium heat. Season with chili & garlic powder. While the chicken is cooking, make the cauliflower rice according to the package. I use the microwave for convenience but there is also an option to cook in a pan if you prefer. I like to keep my dishes to one pan only if possible!
Once the chicken is fully cooked, add a cup of salsa to the pan, then add in the cooked package of cauliflower rice. Mix it all together for a minute or two and voila, its done! I split mine into approx 4 servings at zero points. It makes about a cup, but if im being honest I don’t weigh it, I measure it with my heart since its zero WW points. I like to fill up on things like this and utilize the zero WW point foods!



My Favorite Ways to Use Zero Point Mexi-Cauli Chicken Mix
Honestly, the options are endless, but my favorite and most used ways to eat this is first, as a taco bowl. I add shredded lettuce at the bottom, the mixture on top, then toppings like avocado, salsa con queso, and light sour cream (you can use non fat greek yogurt too I just LOVE sour cream!)
Can I make this ahead of time and freeze it?
Yes!! This reheats and freezes SO well! If you plan on eating it all within 3-4 days I would just put it a container in the fridge and microwave it as needed. If you find it gets a bit dry just add an extra tbsp of salsa when you heat it! To freeze it, let it completely cool, and I like to put mine in ziploc freezer bags and pull one out the night before!

Zero Point Mexi-Cauli Chicken Mix
Ingredients
- 1 lb 98% ground chicken (or fat free ground turkey)
- 1 package Green Giant mexican style cauliflower (or any cauliflower mixture of your choice)
- 1 cup salsa (I use Tostitos Chunky Medium)
- 1 tsp chili powder
- 1 tsp garlic powder
Instructions
- Add the package of ground chicken to pan, sprinkle with the chili & garlic powder, and begin to cook the chicken
- While the chicken is cooking, microwave your caulifower rice according to the package
- Cook the ground chicken fully through, about 10 or so minutes
- Once the chicken is cooked, add the cup of salsa, and the bag of cooked cauliflower to the pan. Mix all together and enjoy!

How much in a serving?
Approx 3/4 cup. What I do is take the whole cooked serving and divide that number by 4!
I’m looking for a verrry mild mex cauli mix. Is the gg the best? I’m sensitive to heat.
Green Giant is def way less spicy compared to Trader Joes, but if very sensitive maybe use regular cauliflower rice and doctor it up to your tasting!
