Lightened Up Oatmeal Cookie Ice Cream Sandwich
One thing about me, is that I NEED dessert. In fact most days I need multiple desserts. So when I began WW I knew I’d have to get creative with how to fit them in, because giving them up was a non-negotiable. Finding Alyssas cookies was one of my favorite finds! I am fortunate to be able to find them at a few of my local grocery stores (Stop & Shop and Wegmans) in the bakery aisle, but I have also ordered from Alyssas website. (I have no code or affiliation with them I just LOVE these cookies!)
What You’ll Need
For this super simple dessert you only 2 thinks. Alyssas Healthy Oatmeal Bites (I find mine in the bakery aisle of Wegmans and Stop and Shop but have also ordered straight from Alyssascookies.com and some low point ice cream. I am using Nicks Vanilla but you can use any. You can even use regular ice cream as you don’t need much of it (I used about 1/4 cup) just as always adjust your points in the WW App!
How To Make
This couldn’t be any easier! First I took 2 of the Alyssas cookies and gently flattened them with my hand on prachment paper. (You can leave them as is I just wanted them to be a little thinner!).. I froze them for about 10-15 minutes and then when I took them out of the freezer, added 3 tbsp of Nicks Light Vanilla Ice cream.
Tips
When it comes to ice cream, I personally love the Nicks brand, Enlightened, or the Target favorite day ice cream. I always like to thaw mine on the counter for at least 10-15 minutes or if I’m in a rush microwave it about 20 seconds. It changes the texture so much and its so good! Being that the Alyssas cookies are so low in points, feel free to use regular vanilla ice cream if that’s what you have on hand! It will drive the points up a little bit. You also can play around with flavor here, but since the cookies have the oatmeal raisin taste, I like the vanilla.
You can definitely make a big batch of these ahead and keep them in the freezer. Defrost them a few minutes before trying to eat for optimal texture.

Ingredients
- 2 Alyssas Healthy Oatmeal Bites
- 3 tbsp Nicks Light Vanilla ice cream (or any ice cream you prefer)
Instructions
- Take 2 Alyssas Heathy Oatmeal Bites, flatten them lightly with your hand, and add to parchment paper.
- Freeze the bites for about 10-15 minutes to harden them up a bit.
- Add approx 3 tbsp of light ice cream and assemble the sandwich
