Low Calorie Air Fried Chicken Parmesan

This lightened up version of Chicken Parm will leave you and the family wondering how its only 1 WW point! Done right in the air fryer, this chicken parm will immediately go into your rotation! I have eaten it almost weekly since starting WW, and the best part is, the whole family loves it!

One of my absolute favorite dinners of ALL TIME has got to be Chicken Parmesan. If we go to an italian restaurant, I d0n’t even need the menu, because I’m getting the Chicken Parm! When I started my Weight Watchers journey in 2018, I immediately said to myself, how can I eat chicken parm at least weekly within my points? And to my surprise, it was SO easy and became one of my favorite meals on rotation! The best part is, its a family favorite, even for those that don’t track food or do WW.

It’s super simple, takes only a handful of ingredients that I always have on hand, and is done right in the Air Fryer! I don’t think I could survive without my air fryer! I have had the Ninja Foodie 5 in 1 and its my favorite that I’ve had! You can find that on Amazon here. , any air fryer would work!

You can also of course use an oven, just check the chicken with a digital meat thermometer to make sure its fully cooked. I just prefer the air fryer, I find it crisps them up the best while also being the simplest and I don’t even have to turn the hot oven on in the summer!

WHAT YOU NEED:

  • Chicken breast
  • Italian Bread Crumb
  • Egg or Egg Beaters
  • Italian seasoning
  • Cooking Spray
  • Zero Point Marinara (homemade, or Fat Free Marinara from whole foods)
  • Fat Free Mozzarella

HOW TO COOK THIS 1 POINT AIR FRIED CHICKEN PARM:

First things first, make sure you have chicken breast cut into thin sliced filets. I prefer them to be about 1/2 inch to 3/4 inch in thickness. I used 4.5 oz raw., so I would suggest somewhere aroune 4-5oz of chicken breast per serving!

Get your dredging station ready. In a shallow bowl, add 3 tbsp of egg beater (you can use whole egg here I just prefer egg beaters when coating things!) and add some italian seasoning.

In another bowl/plate add 14 grams of italian bread crumb for 1 point. (Check the serving of your particular brand but most are around this)

Dip the chicken breast into the egg wash, then fully coat it into the breadcrumb and give a spray of cooking spray to lock everything in.

Place right into your air fryer thats been pre heated to 375 degrees and air fry about 13-15 minutes, flipping halfway,

When cooking chicken I highly suggest checking on it after the 10 minute mark and always check the temperature with a digital cooking thermomter to ensure that its fully cooked through! Air fryers and size of chicken can always vary so its best to be sure!

Once the chicken is cooked through, add 2 tbsp of marinara sauce. I use zero point marinara either making The Skinnyish Dish Crockpot marinara or purchasing the whole foods fat free marinara for zero (see image below)

Next up, add 20 grams of fat free mozzarella cheese for zero points. Pro-tip, if you find your FF mozzarella cheese doesn’t melt well, you can give it a quick spray of cooking spray before baking it and it does wonders! (people also rinse it under water and pat it dry which also works well!)

Put it back in the air fryer for an additonal 3 minutes or so until the cheese has melted!

WHAT TO SERVE WITH IT?

I love a good old fashioned chicken parm with spaghetti dinner. You can use regular spaghetti for 5 points, Dreamfields Pasta (Can purchase from netrition.com) .. this is my usual go to! But on a day that I want to save points I will have it with zero point spaghetti squash! You can also turn this into an awesome sandwich by adding it to a bun or sub roll!

Equipment

  • 1 Air Fryer

Ingredients

  • 4.5 oz chicken breast (or any size ,its all zero points)
  • 3 tbsp egg beaters (or one beaten egg)
  • 1 tsp italian seasoning
  • 2 tbsp marinara sauce (I used fat free marinara from whole foods)
  • 20 grams fat free mozzarella cheese (kraft)
  • 14 grams italian bread crumb

Instructions

  • In a shallow bowl, add the 3 tbsp of egg beater with the italian seasoning
  • Add the 14 grams of italian breadcrumb to a plate or shallow bowl
  • Dip the chicken breast into the egg wash first, then fully coat it with the breadcrumb.
  • Spray the coated chicken with cooking spray
  • Add the chicken to a pre-heated air fryer at 375 degrees
  • Cook about 13-15 minutes, flipping halway through.
  • *Check the chicken with a digital thermometer to ensure its cooked through*
  • Once cooked through, add 2 tbsp of marinara sauce and 20 grams of fat free mozzarella on top of the chicken breast
  • Spray your fat free cheese with cooking spray to help melt
  • Air fry an additional 3 minutes or so to melt the cheese
