healthy chicken fried rice

Chicken Fried Rice is one of my absolute favorite things to eat. I love having the real deal from a restaurant once in awhile, but I don’t always love how I feel after eating it. I also love a god fake out take out night, where I can save points and money on take out, but still satisfy that craving!
Along came this lightened up, healthy, quick and easy, chicken fried rice recipe. This comes together super quick and only takes a handful of ingredients.
What you’ll need to make this chicken fried rice
The best part about this recipe. is it comes together with ingredients I always have on hand! You can of course make some swaps here for what you have and use this as inspiration. Here’s what I used:
- CHICKEN- 0 POINTS. You can use any chicken here. I’ve made this with grilled chicken breast, ground chicken creast, and rotisserie chicken breast! All are zero points.
- BIRDS EYE CAULIFLOWER FRIED RICE STYLE: This is always in my freezer! You can have the ENTIRE bag for only 1 point, or half the bag for zero! It has a nice sauce that comes with it for flavor and helps bulk up the meal while adding fiber. This is the one I use.
- RIGHT RICE- I love this rice, but you can absolutely use regular white or brown rice here too. The Right Rice I got at Whole Foods and it gives me kind of a sticky rice/rice a roni vibe and packs extra fiber and has 10 grams of protein per serving!
- EGG– I love egg in my fried rice, so I add one for zero points and extra protein!
- GARLIC– I love fresh garlic in my rice!
- REDUCED SODIUM SOY SAUCE– I add about 1 tbsp to the rice, but you can skip this if you’re watching sodium!

How To Make This Healthy Chicken Fried Rice
First things first, cook the cauliflower rice and the Right Rice according to the packaging. I make the whole thing of rice (its 4 servings) and store the leftovers in the fridge, but it comes to about 3/4 cup of cooked rice if you decide to swap it out for regular or brown rice. I used half of the bag of the cauliflower rice for zero points.
I kept this version SUPER simple by adding just shredded rotisserie chicken breast that I grabbed that day, but if you are using any other chicken, cook that first.
Once everything is cooked, spray a large pan and put on low/medium heat. Add the half package of cauliflower rice, the 3/4 cup of right rice, an egg, garlic, and the chicken to the pan like so:

Make sure the egg is cooked through, the start to mix all of the rice together and let it cook in the pan and come together, about 5 minutes. Add the 1 tbsp of soy sauce.

This is what the rice will look like once its all mixed together!

Healthy Chicken Fried Rice
Ingredients
- 1/2 package Birds Eye Cauliflower Fried Rice Style (you can use the whole package if you want, just add 1 point! I do this if I'm extra hungry)
- 3/4 cup cooked Right Rice- original (or any rice of your choice, I just prefer the extra protein and taste of the right rice with this recipe. I get mine at Whole Foods)
- 3-4 oz cooked chicken breast (I used Rotisserie chicken, but any zero point chicken breast here will work!)
- 1 egg scrambled
- 1 tsp fresh garlic (I used jarred garlic for convenience )
- 1 tbsp reduced sodium soy sauce
Instructions
- Microwave the bag of Birds Eye Fried Rice cauliflower according to the package
- While that is cooking, cook the Right Rice according to the package
- I used Rotisserie chicken so I just shredded up about 3 oz and put it aside, If you need to cook chicken, cook it to your liking first.
- Scramble up an egg or two
- Now add 1/2 bag of the Birds Eye Rice, 3/4 cup cooked Right Rice, Chicken, Garlic, and 1 tbsp soy sauce to the pan that you cooked the egg in.
- Mix this all together for about 3-4 minutes.
- Serve and enjoy!
