Healthy Corn Salad

This lightened up corn salad is a refreshing low point side dish, and great to bring to barbeques or serve along side your favorite lightened up hamburgers or hot dogs!

Growing up, this corn salad was a STAPLE at all of our family get togethers. My aunt always made it and this was always one of the first things I put on my plate. I always assumed it was insanely high in points because of how good it is, so when I asked her the ingredients and she told me I was blown away. All I did was swap out the regular mayonnaise for light mayonnaise and it lightened it up while keeping the flavor!

What You’ll Need

  • One can of white corn (make sure there is no sugar added to keep it zero points!)
  • Light Mayonnaise (I prefer Hellmans brand)
  • 1/4 cup chopped scallions
  • 1/4c cup diced tomatoes
  • salt and pepper to taste

How To Make It

This recipe couldn’t be easier! It comes together in less than 5 minutes! First I start by draining a can of white corn under water in a strainer and put it into a mixing bowl. Add 3 tbsp of light mayo, 1/4 cup of diced scallions, 1/4 cup diced tomatoes, and salt and pepper to taste! Now mix it all together, and boom, you have the most delicious corn salad! This comes to 1 WW Point per serving and makes 3, 3/4 cup servings.

Can I substitute ingredients?

Of course! You can use regular corn here, frozen corn, or any corn that zero points. To make sure the corn is zero points, check that it has no added sugar! You can also use regular mayonnaise or fat free just always adjust the points if you decide to make any swaps! The recipe builder in the WW App is great to double check the specific ingredients you are using!

Can I make more or less of this recipe?

Yes! I have made a single serving for myself at times, and I have also used frozen corn where there are more servings per bag. The typical rule of thumb here is approx 1 tbsp of light mayo per 1 serving of corn. So if a bag of frozen corn is used that has 5 servings, use 5 tbsp of light mayo. You can also add more or less of the scallions or tomatoes as you prefer! I have also added red onions, jalapenos, red peppers.. the options are endless here!

Ingredients

  • 1 can white corn (drained and rinsed )
  • 3 tbsp light mayonnaise (I prefer Hellman's)
  • 1/4 cup chopped scallions
  • 1/4 cup diced tomatoes
  • salt and pepper to taste

Instructions

  • Drain the corn and rinse under cold water
  • Add to a mixing bowl and add in the mayo, scallions, tomatoes, salt and pepper
  • Mix well. This tastes even better after sitting in the fridge for a bit but can be eaten immediately!
