Lightened Up Eggs in a Hole

Easy, lightened up version of one of my favorite breakfasts growing up. Minimal ingredients and takes only 5 miutes to make! This was a childhood favorite of mine, and being able to make it for such low WW points and lightened up has made this delicious, easy breakfast a staple!

Ingredients

  • 2 slices 647 italian or white bread (or any low point bread of your choice)
  • 2 eggs
  • spray butter
  • salt & pepper to taste
  • cooking spray to coat pan

Instructions

  • Takes 2 slices of low point bread and stack them on top of each other.
  • Cut out a hole in the center using a knife, a glass, or just pushing through with your hand! All methods work here.
  • reserve the 2 cut out slices of bread
  • Pre-heat a pan on medium/low heat and spray with cooking spray
  • Add the bread and crack an egg into each hole
  • Cook for about 2 minutes and flip everything
  • Cook for another 2-3 minutes depending how you like your eggs
  • I use the little extra pieces that were toasted to dip my in my egg!
