After years and years of convincing myself the only way you could lose weight and get healthy was to eat boiled chicken and steamed veggies for every meal. I realized that was NOT the case, and started to lighten up all of my favorite foods. I joined Weight Watchers and started to find ways to make versions of things I wanted that still felt indulgent, but lightened up to fit into my everyday better. As a mom of 3 young kids, I needed things that were super easy, quick, but still filling and delicious.
